Ingredients: IRISH SODA BREAD (Yield: 1 round loaf)
4 c. flour 1/3 c. sugar 1 TBS baking powder 1 tsp salt ¾ tsp baking soda 6 TBS butter 1-1/4 c. dark raisins or currants 2 eggs 1-1/2 c. buttermilk

Directions:1. Combine flour, sugar, baking powder, salt and baking soda in large bowl. With pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in raisins or currants. 2. Beat eggs slightly; set aside 1 TBS egg. Combine remaining eggs and buttermilk; stir into flour mixture just until flour is moistened (dough will be sticky). 3. Turn dough onto well-floured surface. With floured hands, knead about 10 times. Shape dough into a ball; place in a greased 2-quart round casserole. 4. Using a sharp knife or scissors, cut a cross, 4” long and ¼” deep, in center of dough. Bruch top with reserved egg. 5. Bake in preheated 350-degree oven for 1 hour and 20 minutes, or until toothpick inserted in center comes out clean. Cool bread on rack 10 minutes; remove from casserole. Serve warm or cold. |

Notes: In an Irish home, fewer things say "welcome" than the smell of fresh Irish soda bread coming from the kitchen; it's an invitation to come on in, catch up, relax, and let your worries melt away in good company and great conversation. With a little butter melted on a warm slice of soda bread, it's a delight for all ages.
