2/3 cup room temperature shortening ( 5 oz. )
3/4 cup brown sugar
1 large egg
2 tsp. vanilla
1 cup flour
1 1/2 cup oatmeal
1 tsp. soda
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon

Directions:
Directions:
Cream shortening and brown sugar well.
Beat in egg and vanilla.
Sift together all dry ingredients in small bowl.
Add oatmeal and stir well.
Mix into creamed mixture until blended.
Cover and refridgerate overnight or a least a few hours.

Line cookie sheet with parchment and pre heat oven to 350'
I use a floured pastry sheet to roll cookies on.
I roll about 1/3 to 1/2 at a time. Flour rolling pin and roll to 1/4" thick.
Cut with floured biscuit cutter or cookie cutters.
Transfer to baking sheet with a thin spatula.
Bake 10 minutes until light brown. Let sit 5 min. Cool on rake.
You can add chocolate chips or raisins to top of cookie before baking.

I used Robin Hood Minute Oats, as that is the oatmeal we eat for porridge. It does cook quickly..
I let sit overnight in fridge as I have read that it gives you a more flavorful cookie.
I really don't know if it makes a big difference. You must have dough cold to roll.

I remember Annie bringing these down from her apartment to share with Mom.
