Directions:Beat together until creamy margarine and sugar.
Add eggs beating in one at time.
Add flour, cocoa, salt and vanilla
Continue beating until all is well mixed in.
Pour and spread into 9x9 greased pan
Bake 350 degrees about 30 minutes. Test by inserting toothpick into centre of cake which should come out clean. If gooey leave for another 5 minutes. Do not overbake. If brownies fall it’s O.K. … makes them fudgy!

Notes: Brownies…yum, yum, I can smell them baking in the oven! They are a family favourite!
The Stephen clan apparently inherited a chocolate gene… I haven’t met a family member, yet old or young, who doesn’t adore chocolate. I don’t remember my Beach/Fuller relatives turning down a delectable chocolate sweet treat either, come to think of it.
My famous brownie recipe is actually one my mother used and both she and I had made it so often we could both do it from memory. I recall one summer evening in my childhood farm home when Mom was baking up copious quantities of brownies. Our farm was hosting a Holstein Twilight meeting, an event always well attended by farm families, highlighted with refreshments following the cattle judging and business meeting. People always came with food to contribute but the flaw in the order of the evening was that they allowed the kids to eat first….and eat they did, leaving sparse picking for the adults. Not only that, but Mom began to panic as she noticed that the food appearing on the table for later seemed inadequate for the crowd that night. Not wanting to be responsible for hosting a Twilight meeting without enough food, she thought of the brownie recipe and flew into a baking frenzy while the barn meeting was going on. Out came the flour, sugar, butter, eggs and cocoa. Doubling the recipe several times, she spread the brownie dough on cookie sheets and turned out pan after pan of hot yummy brownies to feed the multitude. From out on the lawn it must have seemed like magic…just like the loaves and fishes story! I imagine people indulged in the “chocolatey” morsels more than usual too…who wouldn’t when the treats were hot and fresh right out of the oven? That was my Mom …always the gracious hostess… whether for the house or the barn!
My brownie memories are of my grandchildren…Ryan, at the cottage, when he could barely talk, pleading, “Gwama…could you make more brownies for tomorrow? One weekend when Courtney was about three and we were babysitting, we embarked on a grocery shopping expedition. Courtney made sure Brownies were on the list because the homemade ones had run out and the grocery store round brownie cakes in the little brown bags were a very acceptable substitute. Upon entering the super market , she marched ahead of Grandpa and I, straight to the baking section, scooped up the brownie bag and deposited it into the cart. Her shopping was done!
When I’m having unexpected company I resort to my mother’s solution and bake up a batch of brownies to be served with ice cream. Not only is the dessert problem solved but the delicious smell is welcoming. Of course I’m assuming that the whole world loves chocolate brownies!
