½ Cup butter
⅓ Cup sugar
¼ Cup brown sugar
1 tsp vanilla
1 egg
1 Cup AP flour
½ tsp baking soda
½ tsp salt
½ Cup chocolate chips
2 Cups crushed potato chips (about 4 oz)

Preheat the oven to 375

Line 2 baking sheets with parchment paper.

In the bowl of a stand mixer, cream together butter, granulated sugar and brown sugar on medium to high speed until light and fluffy, 3-5 minutes.

Add vanilla and eggs, and beat on medium speed until just combined.

Add flour, baking soda, and salt; then mix on slow speed until just combined.

Stir in the chocolate chips and half of the crushed potato chops.

Put the remaining potato chips in a shallow bowl. Roll the 2 inch balls of dough in the remaining potato chips until they are completely coated..

Place the cookies 2 inches apart on the prepared baking sheet and bake until golden brown, about 12-15 minutes..

Let cool for 5 minutes, then transfer to a wire rack to cool completely.
