2 cups flour
4 ¼ tsp baking powder
1 tsp salt
1 tbsp sugar
1 tsp baking soda
4 ¼ tbsp shortening
1 cup sour milk or cream (can sour with 1 tbsp vinegar)

Preheat oven to 400 F
Measure and sift together into a bowl all the dry ingredients
With a pastry blender or knife cut in shortening
Mix together until mixture is crumbly
Add milk, stir with a fork until moist
Gently roll out the dough on a floured board and cut into rounds. Put on a greased pan.
Bake for 15 minutes or until golden brown

Grandma Beach made tea biscuits often, whipping them together just before the meal so they would be served hot from the oven. She had a baking board which she could pull out from the counter, under which was a flour and sugar bin. As well as the bags of flour and sugar the baking equipment was stored here for quick use… all the measuring cups and spoons and her white enamel mixing bowl with a green rim, which she used for nearly all her baking and seemed to be her closest friend in the kitchen. Having made the biscuits so often, she could mix them up in minutes and have them on the table at precisely the right moment with the rest of the dinner, quite amazing!
