1 rabbit (or chicken), cut up
1/2 c. flour
1-1/2 tsp. salt (or to taste)
1/2 tsp. pepper

1/2 tsp. onion powder
1/2 tsp. sweet paprika
1/4 tsp. garlic powder
1/4 tsp. cayenne
lard or bacon fat (or oil or butter)

Directions:

1. Shake rabbit (or chicken) pieces in a paper bag that contains the flour and seasonings.
2. Place rabbit in a cast-iron skillet with about 1/4 inch of fat.
3. Brown evenly on all sides and remove to baking dish.
4. Add 1/2 cup hot water. Cover and bake at 325°F for one hour or until tender.
 

Country Gravy (For each cup of gravy desired)

2 T. of pan drippings
1-1/2 T. flour
1 c. milk

Directions:

1. Over medium heat: Combine flour and drippings in saucepan and stir for 2 minutes to remove the raw flour taste.
2. Add milk and stir it into pan with flour mixture.
3. Continue to cook until gravy is thickened to your liking.
4. Serve rabbit and gravy over rice or mashed potatoes.

Mother's mother was the kind of cook who could take anything and create a feast. She was really old school, things were cooked "until they were done." Measurements were more like "until it looked right" or by taste. It worked well… Except for the time that the older grandkids provided rabbits for supper. Grandma knew that we younger kids would have trouble eating Bugs Bunny, so she made it look like chicken. It tasted good until we knew what it was, and the big boys certainly would not let that opportunity pass!
