3 Tbsp cocoa powder
2 cups sugar
½ cup milk
¼ cup butter
1 tsp vanilla
½ cup smooth peanut butter
3 cups gluten-free oats

Directions:
Lay out a large sheet of parchment paper on a clean/clear/flat surface. In a large saucepan melt all ingredients except oats over medium heat. When combined, bring to soft ball stage (130ºC/234ºF), remove pan from heat and dump in all the oats. Mix well and drop by teaspoonful onto parchment paper, allow to cool and set. Do your best not to leave these morsels in direct sunlight as they won't set. Store in an airtight container and possibly in the refrigerator to prolong shelf life.
