1 med. cooked potato
2 pkg. yeast
1 qt milk - scalded
1 1/2 Tbls. salt
1 3/4 cup sugar
3/4 cup melted shortening
4 eggs beaten

Directions:
Directions:
Cook the potato in enough water to have 2 cups at completion of cooking - keep water. Mash the potato & add 1/2 cup of the water from the potato, allow to cool to lukewarm.

To the other 1/2 cup water add 2 pkg. yeast. When dissolved, add to the potato mixture. Then add enough flour to thicken. Cover & set in a warm place overnight to let rise. (This must be done the night before)

The next morning, scald the milk and cool to lukewarm. Add to the mixture from the night before. Add salt, sugar & melted shortening, mix. Add beaten eggs & continue to mix.

Add enough flour to stiffen so that the dough can be kneaded. Continue kneading for 8-10 min.

Roll into pretzels and let rise again.

Bake @ 375-400 until golden brown.

This custom of baking New Years pretzels came into the family from Grandpa Meyer's ancestors who immigrated to the United States from the Black Forest area of Germany. When he & Grandma married, this was one of the things that he asked Grandma to continue. These pretzels were baked for and then eaten on New Year's Day to insure prosperity & happiness throughout the coming year.
