12 ounce package spaghetti
1/2 cup chopped white onions
1/2 cup chopped green bell pepper
1 pound ground beef
1 (28 ounce) can diced tomatoes
1 (4.5 ounce) can of sliced mushrooms, drained
1 (4.5 ounce) can of sliced olives, drained
1 teaspoon dried oregano
2 cups of shredded Cheddar cheese
1 (10.75 ounce) can of condensed cream of mushroom soup
1/4 water
1/4 cup grated Parmesan cheese

1. Bring large pot of lightly salted water to boil. Add spaghetti and cook 8 to 10 minutes, until al dente. Drain and set aside.
2. In a large skillet over medium high heat, saute the onions and green peppers with the ground beef. Once the beef is brown drain the grease from this mixture. Add the tomatoes, mushrooms, olives and oregano. Simmer 10 minutes.
3. Preheat oven to 350 degrees F. Place half the cooked spaghetti into a greased 9x13 inch baking dish. Top with half of the meat mixture and 1 cup of cheese. Repeat layers.
4. In a bowl mix together cream of mushroom soup with water until smooth and pour over the casserole. Sprinkle with Parmesan cheese.
5. Bake in oven 35 to 40 minutes, let stand 10 minutes before serving.

This is a family favorite! My grandma makes it much better than I do, of course! Everything she makes is so good!! I even enjoy this dish cold from the fridge when I'm lucky enough to have any leftovers. This dish will freeze well if you are meal prepping or just made too much. When my kids stop by I never have any left.
