2 c oil
3c sugar
2c buttermilk
2T baking powder
1 1/2 tsp vanilla
4 eggs
1tsp baking soda
6c Flour

Directions:
Directions:
Beat oil, sugar and eggs until well creamed. Add 1 tsp of baking soda to 2 cups of buttermilk. Stir in 1 tsp of salt. Add to the above mixture. Stir in 1 1/2 tsp of vanilla. The batter should be thick. If it is not thick enough you can add flour a little at a time. Let batter set a few minutes, then drop batter from spoon onto lightly greased cookie sheet. Make sire to leave enough room between cookies. The cookie will puff up and get big. Bake at 350º for 10 minutes. Be careful not to overbake. Let cool and ice with your favorite powered sugar icing. I recommend Aunt Joyce's recipe found in this book.
