Carrot Cake

2 cups flour
1 tsp baking powder
1½ tsp baking soda
1 tsp salt
2 tsp cinnamon
1½ cups sugar
1½ cups oil
2 tsp vanilla
4 eggs
2 cups grated carrots
14 oz can crushed pineapple
Directions:
Directions:
Sift together flour, baking powder, baking soda, salt and cinnamon. Add sugar, oil, eggs and vanilla. Mix well. Add carrots and pineapple and mix. Pour in greased 9"x13" pan. Bake at 350ºF for 45 minutes or until toothpick comes out clean. When cool put on frosting
 

Cream Cheese Icing

4 oz cream cheese
¼ cup soft butter
1 tsp vanilla
1 cup icing sugar

Directions:
Beat cream cheese, butter and vanilla well. Add sugar gradually, beating until fluffy. Spread over cake. Can use 1.5 batches if want more icing
