Ingredients: 8 boneless, skinless chicken breasts 12-15 slices Land O'Lakes american cheese ¼ cup butter Seasoned bread crumbs 1+ cup of white vermouth or 1 bottle of beer 2 cans small whole potatoes Large toothpicks

Directions: |
Directions:Pound chicken breasts to medium thickness Place butter in fry pan to melt Coat both sides of chicken in the butter and then in bread crumbs Place 1 piece of cheese on each breast, roll the breast & secure with toothpick Brown the outside of the roll in the fry pan Place the rolled chicken into a baking dish Break up several pieces of cheese and scatter over chicken Pour 1 cup vermouth (or 1/2 bottle of beer) over the chicken Drain potatoes and add to baking dish Bake uncovered at 375º for 35-45 minutes Sauce should be thick and creamy -- add more vermouth/beer and/or cheese near end of cooking and stir to make more sauce (if needed) |
