Grammy's Rolled Chicken Recipe

8 boneless, skinless chicken breasts
12-15 slices Land O'Lakes american cheese
¼ cup butter
Seasoned bread crumbs
1+ cup of white vermouth or 1 bottle of beer
2 cans small whole potatoes
Large toothpicks

Directions:
Directions:
Pound chicken breasts to medium thickness
Place butter in fry pan to melt
Coat both sides of chicken in the butter and then in bread crumbs
Place 1 piece of cheese on each breast, roll the breast & secure with toothpick
Brown the outside of the roll in the fry pan
Place the rolled chicken into a baking dish
Break up several pieces of cheese and scatter over chicken
Pour 1 cup vermouth (or 1/2 bottle of beer) over the chicken
Drain potatoes and add to baking dish
Bake uncovered at 375º for 35-45 minutes
Sauce should be thick and creamy -- add more vermouth/beer and/or cheese near end of cooking and stir to make more sauce (if needed)

The original recipe called for vermouth, but over the years, Grammy started using beer.

Susie (Dave) has added sundried tomatoes inside the rolled chicken multiple times and it is a nice variation.
