6 large Yukon Gold Potatoes
½ cup celery, finely chopped
½ cup onion, finely chopped
3 hardboiled eggs, chopped
3-4 heaping Tbsp mayonnaise
3 Tbsp Wishbone Italian Dressing
Salt & Pepper to taste

Directions:
Directions:
Wash potatoes
Boil whole potatoes with skin on
Peel cooked potatoes while hot & cube
Add onion, celery, eggs, dressing, salt & pepper
Mix to fully coat the potatoes
Refrigerate till cool
Add mayonnaise

Note that I make this from memory and have NO idea about the quantities, so I have included the quantities exactly as Grammy had them. However, we all know how accurate those were sometimes. My preference is to slightly overcook the potatoes until a little mushy and to use 2-3 times as much Wishbone as Grammy called for. This gives the potato salad a mushier/creamier texture. Peeling the hot potatoes sucks, but there's no way around it....I've tried.
