1 large head of cabbage
2 lbs. lean beef
1 egg
½ cup bread crumbs or matzah meal
2 Tbsp. white rice
½ tsp. salt
¼ tsp. pepper
2 lemons
¾ cup brown sugar
2 apples, peeled and cut into chunks
4 carrots, peeled and sliced into ½ inch pieces
2 can Campbells tomato soup
1 large can of tomato sauce

1. Place cabbage in a large pot filled with water. Cook cabbage until soft, gradually peeling off leaves as they become soft. Drain.

2. Combine meat, egg, bread crumbs, rice, salt and pepper.

3. Roll 1 tbsp. of meat mixture into a ball. Place in the middle of a single leaf of cabbage and fold cabbage in half. Fold in both sides of cabbage and tuck remaining side in fold. Place in single row, fold side down, in baking pan. Repeat process with remaining meat.

4. In a large saucepan, combine soups plus one can of water, tomato sauce, apples, carrots, juice squeezed from 2 lemons and brown sugar. Cook sauce for 30 minutes, stirring frequently.

5. Preheat oven to 350º.

6. Pour sauce over stuffed cabbage and bake, covered, for 1 hour, until meat is cooked through. Uncover and cook an additional 20 minutes.
