4 oz. unsweetened chocolate
1 c. semisweet choc chips
(option: use 1 c. plus 4 oz. bittersweet chocolate chips in place of above ingredients)
6 Tb. butter
3 eggs
1 c. white sugar
1-1/2 tsp. vanilla
1/2 c. all purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
2 Tb. chocolate powder
1 c. chocolate chips

Directions:

Melt the first 3 ingredients together in 30 second increments (chocolate and butter).

In a separate bowl, whip together the eggs and sugar for ~2 minutes, until thick and pale. Add the vanilla and the melted chocolate mixture.

Mix dry ingredients together, then add to the chocolate mixture. Fold in the chocolate chips last.

Cover and refrigerate for at least one hour, or overnight.

Roll into 1" balls and place on un-greased cookie sheet, 2" apart.

Bake at 350º F for 9-11 minutes.

A very deep and rich chocolate cookie for the true chocoholic. This recipe uses relatively little flour, resulting in dense, fudge-like cookies. They keep well in the freezer. We discovered this recipe when Riley asked to make Chocolate Cookies on a snowy day in 2020.
