1-8 oz pkg pitted dates (about 1⅓ Cup)
½ Cup water
2 Tbsp lemon juice
½ Cup butter

½ Cup shortening
3 Cups all purpose flour
½ Cup sugar
½ Cup brown sugar
1 egg
3 Tbsp mlik
1 tsp vanilla
½ tsp baking soda
¼ tsp salt

*Snip pitted dates; put in a saucepan; stir in water and sugar. Bring to a boil then reduce heat.

Cook and stir for about 2 minutes or until thickened.

Stir in lemon juice and vanilla. Set aside to cool.


Beat butter, sugar and shortening with an electric mixer for 30 seconds or until softened.

Add sugars, milk, egg, vanilla, soda and salt. Add remaining flour; beat until thoroughly combined, scraping down the side of the bowl when necessary.

Cover and chill dough for at least an hour, or until easy to handle.

To shape dough, divide in half, Place dough between two sheets of parchment or waxed paper, rolling each to 12" x 10" rectangle. Remove top sheet of parchment/wax paper.

Spread date mixture over half of the dough. From long side, roll up each half into a spiral, removing bottom sheet of paper as you roll.

Moisten and pinch to seal the edges.

Wrap in plastic wrap or wax paper. Chill for 4 to 48 hours.

Grease a cookie sheet. Cut dough into ¼ inch slices. 2 inches apart on a prepared cookie sheet.

Bake at 375 for 10 to12 minutes or until done. Remove cookies to a wire rack to cool
