I 1/2 cups sifted icing sugar
1 cup butter
1 egg
1 tsp. vanilla
1/2 tsp. almond extract
2 1/2 cups flour
1/2 tsp. salt
1 tsp. soda
1 tsp. cream of tarter


ICING:
1 tbsp. meringue powder
3-4 tbsp. warm water
1 1/2 cups sifted icing sugar
pinch salt
Flavor with a bit of almond or vanilla flavoring.

Cream butter, egg, flavorings.
Mix icing sugar into creamed mixture.
Sift together dry ingredients and stir into wet.
Mix well with spoon.
this will be a thick cookie batter.

Chill overnight or until firm.

Roll a portion of dough on floured surface - I use a pastry sheet.
It should be about 1/4 inch thick. Cut into shapes and transfer carefully with thin spatula to baking sheet that is lined with parchment.
Bake at 325' for approximately 8- 10 min. Cookies will have very lightly browned edges
(similar to shortbread). Cool completely.

Icing
Mix meringue powder and water in small deep bowl.
Mix with mixer. Gradually add icing sugar till proper consistency.
It need to be just thick enough to spread on cookies and spread to level. I sometimes tap on counter.
You can colour to a variety of colours and decorate while still wet or let dry and use a bit thicker icing to pipe. This is a trial and error method.
You may need to make more icing.

Alex Potts really likes these cookies. He always asks Grandma to make, when you ask what he would like. Andrew Potts prefers gingerbread cookies.

I mostly make a half batch of these as that is enough to decorate.
I like to eat without the icing.
If I make a half batch I just use a smaller egg.
The amount of icing in recipe is for half a batch.

You can also ice with a Butter Cream icing, but they do not mail well, but icing will taste better.
