Ingredients: 2-3 Tbsp oil or butter 2 large handfuls tortilla chips, lightly crumbled (about 2 cups) - you can use corn tortillas, or those taco shells in the back of your cabinet. Even a little stale doesn't hurt! ½ cup salsa 3 eggs, beaten Salt and pepper 1 cup shredded cheese, such as cheddar, pepper jack or anything that melts well Your favorite Mexican toppings - mix and match from sour cream, green onion, pickled jalapeños, cilantro, etc.

Directions:1. Heat salsa in a microwave for 30 seconds, or until warmed through, about 30 seconds.
2. Warm oil in a medium or large skillet.
3. Cook chips or tortillas until heated through.
4. Season eggs with salt and pepper and add to the pan. Toss until not quite set, just a few seconds.
5. Cover with warmed salsa, and cheese.
6 Turn the heat down to the lowest setting,. Cover the pan and let it sit until the cheese starts to melt. 7. Cut into slices and serve. Add your favorite Mexican toppings. (Sour cream and green onion work well.) |

Notes: If scrambled eggs and nachos had a baby, it would be migas. This is so fast. easy, tasty and economical, it will quickly become a part of your breakfast rotation. The quantities are very forgiving; you can just use whatever you have on hand.
You can bulk it up more by throwing in any warmed up leftover meats or veggies before you add the salsa.
