2 Cups AP flour
¼ tsp baking soda
¼ tsp salt
½ Cup softened butter
½ Cup sugar
1 egg
¾ Cup currants, or raisins
1 tsp caraway seeds
⅓ Cup buttermilk

Directions:
Directions:
Preheat oven to 350. Line 2 cookie sheets with parchment paper

Combine flour, baking soda and salt in a small bowl, Stir to combine

Beat butter and sugar in a bowl with an electric mixer on medium speed until fluffy.

Add egg, beat 1 minute until combined.

Add flour mixture, beat on low speed until combined.

Add currants (raisins) and caraway seeds, mix well.

Add buttermilk, mix until combined.

Drop by tablespoons of dough, 1 inch apart on prepare cookie sheets.

Bake 12 to 15 minuted or until light golden brown.

Remove to wire rack. Serve warm
