8 large eggs
1 ½ cups of half and half
1 cup of shredded cheddar cheese
1 cup chopped onion
4 ounces of chopped ham
2 cups fresh baby spinach
1 tbsp. extra virgin olive oil
Salt
Black pepper

Directions:
Directions:
1. Heat the olive oil in a large skillet and sauté the onion and the meat for 5 minutes
2. Add the spinach and sauté until the spinach starts to wilt, cover with a lid and remove from the heat and set aside.
3. In a mixing bowl beat the eggs, a pinch of salt and pepper and the half n half.
4. Coat a 9" pie dish with olive oil (or Pam) then place the spinach/onion/meat in the bottom of the dish and then layer the cheese on top.
5. Pour the egg mixture in and place in a preheated 375º oven.
6. Bake 40-50 minutes till done.

You'll serve six to eight people with this delicious Frittata.
