1 lb. ground beef
1 Tbls. oil
1 clove garlic
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tsp. salt
1 tsp. chili powder
1 can red beans - drained
2 1/2 cups tomatoes with juice
1/4 cup uncooked rice
3/4 cup grated cheddar cheese
1/4 cup sliced black olives

Brown beef in oil with garlic. Add the onion & green pepper until onion is transparent. Drain off fat. Add salt & chili powder & stir.

In a 2 qt. casserole, combine meat mixture with beans, tomatoes & rice.

Bake covered @ 350 for 30 min.

Remove cover & sprinkle with cheese & olives. Bake an additional 15 min, until cheese is melted.
