2 large potatoes, peeled and quartered.
3 cups water
1/2 cup sugar
1 1/2 teaspoon salt
2 pkgs dry yeast
2 eggs beaten
2/3 cup shortening
about 6 1/2 cups all purpose flower

Directions:
Directions:
Boil Potatoes in water until done, drain, reserving 1 1/2 cups water. Cool water to lukewarm, add sugar, salt and shortening and yeast to potato water, stirring until yeast is dissolved.

Mash potatoes, add 1 cup mashed potatoes and eggs to potato water, gradually add about half of flour, heat until smooth. Gradually add remaining flour to make a soft dough.

Turn dough out on a lightly floured board. Kneed until smooth and elastic.

Place in a greased bowl turning to grease all sides. Cover and let rise in a warm place until it doubles in bulk. About 1 hour.

Pinch dough down and can roll into rolls or put in a greased bowl and store in refrigerator until ready to use. Put rolls in greased pan and let rise until doubled in bulk. Bake at 400 degrees for 15-20 minutes or until done.
