2 lbs pitted prunes
4 Tbsp corn starch
½ cup sugar
1 tsp orange marmalade
1 cup crushed walnuts
8-oz jar red maraschino cherries, drained

Italian Egg Biscuits:
5 cups flour
5 tsp baking powder
1 cup sugar
¼ tsp salt
3 eggs
¾ cup milk
¾ cup oil
1 Tbsp anise xtract

Directions:

Filling:
Simmer pitted prunes in water to cover, until tender; about 10 to 15 minutes. Cool, then drain.

Combine with corn starch, sugar, orange marmalade, crushed walnuts, maraschino cherries.

Cook until thickened; cool.

Dough:
Mix flour, baking powder, sugar, and salt in a large bowl. Make a well in the center.

Beat eggs. Pour into well. Add milk, oil, anise. Mix to form a well blended dough.

Place on lightly floured board. Knead lightly until dough is smooth.

Divide dough into two or three pieces. Roll each out into a rectangle. About ⅛ to ¼ inch thick. Fold sides up over filling and seal like a jelly roll.

Place on cookie sheet and bake at 375ºF until done. About 10 minutes.

Cool, then slice on angle.
