*We typically double this
1 block ‘Almond Bark’ chocolate candy coating*
18 oz chocolate chips (12 oz AND 6 oz bag, or 3 cups)
2 oz unsweetened baking chocolate
4 sleeves Ritz crackers (about 100 crackers)
peanut butter

*This is a 24 oz block about 5x7”, I have found it only at Walmart. The Vanilla flavor bark is fine to use as well.

1.Make peanut butter sandwiches by spreading peanut butter in between two Ritz crackers. (Make all of them upfront and lay them out on wax paper, so you can dip them all before the chocolate cools). About 4 dozen. This is a good step for kids to help with. (Set aside and reserve any broken crackers)
2. Chop the unsweetened baking chocolate squares (they will melt faster, this will save you time later).
3. Put the first 3 ingredients in a large microwave safe bowl (8 cup Pyrex measuring cup works well). Microwave 3 minutes and stir. Stir until fully melted with NO lumps. IMPORTANT: The unsweetened chocolate squares will melt last, stir well to make sure they are fully melted and incorporated evenly into the mixture. If you still have a few lumps, microwave 30 seconds and stir until melted.
4. Dunk the sandwiches into the bowl of chocolate, turn using 2 forks making sure entire cracker sandwich is covered. When the bowl is full you can drop three at a time in the bowl, then turn and coat each one. As the chocolate gets lower use a rubber spatula to scrape down the sides and dunk them one a time.
5. Place on wax paper to harden. Allow at least 2 hours to harden fully, if you are in a rush place on a cookie sheet in the freezer to harden.
6. Optional: with a sharp paring knife, trim off any messy edges or major blobs of chocolate from the bottom edges of the cookies. Transfer to a large plastic container, with wax paper between layers of cookies.
7: Optional: with any leftover chocolate: crush some of the reserved broken crackers and mix in. If desired mix in walnuts, peanuts or almonds. Spread out on wax paper. You can press whole nuts in the top in rows if desired. When cool cut into small squares (cut between the rows of whole nuts if using).

These cookies are elegant, decadent and delicious. I'm asked for the recipe every time I bring it somewhere. You'd never know it is just peanut butter and Ritz dipped in chocolate.
