1 1/2 c quick cooking oatmeal
1 1/2 c peanut butter
1 egg
1/2 c flour
1/2 c sugar
1/2 c butter
1/2 c brown sugar
1/2 c powdered sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla
6 oz. baking chocolate

Directions:

Preheat oven to 350.
Mix together oatmeal, flour, baking powder, baking soda and salt.
In separate bowl, mix softened butter, sugar, brown sugar, 1/2 c peanut butter, egg and vanilla.
Combine the two mixtures a little at a time.
Stir just until the ingredients are mixed together.
Place rounded teaspoonfuls of batter on an ungreased baking sheet and leave about an inch between each cookie.
Use the tines of a fork to press dough down so they form small, flattened circles.
Bake 8 minutes.
Let cool completely.

Now combine 1/2 c powdered sugar and 1 c peanut butter. Stir until light and fluffy-about 5 minutes.

Melt chocolate in a double boiler or in microwave. Do this slowly to avoid burning chocolate.

After cookies have completely cooled, make sandwiches out of them using the powdered sugar/peanut butter mixture in the middle. Dip one side into the chocolate and let dry on a wire rack.
