2 pounds carrots (8-10) peeled and cut into pieces
1 cup onions sliced
2 tsp minced ginger
2 cups or 1 can chicken broth
3/4 can coconut milk (unsweetened)
1 1/2 tsp coriander
1 1/2 tsp ground cumin
1 tsp ground turmeric
1 tsp paprika
1 tsp salt
1 tsp black pepper
1 tsp sugar
Pinch cayenne pepper

1. Saute the onions in some oil
2. Add in the carrots and saute for 5-7 minutes
3. Add the chicken broth and all the spices
4. Cook until the carrots are tender
5. Once carrots are tender, use an immersion blender to blend the soup down to liquid.
6. Add the coconut milk and turn down the heat to low.
7. Make sure and stir so the milk does not boil.
8. Add any more seasonings to taste if needed.

Note: We usually make sticky rice, put that in our bowl and then pour this soup over it for a nice hearty, feel good meal. You can also add in some sweet potatoes to the soup if you wish for an earthy taste.

Garnish with the extra coconut milk, or cilantro or lime juice, anything really that sounds good to you!
