1 lb. of bacon
1 head of cauliflower (or 1 bag florets)
1 onion, diced
1 carrot, diced
1 celery, diced
2 T. EVOO
1/2 t. red pepper flakes
Salt and pepper to taste
2 cloves garlic, minced
32 oz. chicken broth
8 oz. onion and chive cream cheese
2 c. cheddar cheese, shredded
3 T. cornstarch
1 c. milk
Green onions, diced

Directions:
Directions:
Fry bacon, remove from pan and save 2 T. of drippings. Add EVOO and sauté onions, carrot and celery 5 minutes. Add garlic, red pepper flakes, salt and pepper and sauté 2 minutes. Add broth and cauliflower and simmer on high 10 minutes. Lower heat and add cheeses to melt.

Mix cornstarch with milk and add to soup. Stir till it thickens. Add crumbled bacon. Serve with extra bacon, cheese and green onions.
