"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
1/2 cup butter
8 ounces sliced mushrooms
1/2 cup flour
1/2 tsp pepper
1/2 tsp salt
1/4 tsp garlic powder
2 cups chicken broth
1 1/2 cups milk
2 egg yolks
1/3 cup heavy cream
1 cup frozen peas
1 cup chopped drained pimientos
4 cups chopped cooked chicken

Directions:
Directions:
1. In a 4 to 6 quart saucepan, melt butter over medium-high heat. Add mushrooms and cook until mushrooms are soft, about 5 minutes.

2. Add in flour, salt, pepper and garlic and stir until no white floor is visible. Pour in chicken broth and milk and bring to a boil. Stir to eliminate any sticking to bottom of pan. Reduce heat to low and simmer until sauce is thickened, about 3 minutes.

3. For a thicker sauce: in a small mixing bowl, whisk together egg yolks with heavy cream. Working quickly, slowly pour in 1/2 cup of the hot mixture in the pan into the egg mixture while whisking the entire time. Immediately pour this mixture back into the pan. Cook 2 minutes more.

4. Stir in frozen peas, drained pimientos, and cooked chicken and heat through, 2 to 3 minutes.

5. Serve hot over rice, pasta, toast or biscuits.
