Sift all together
2 Cups flour 1 cup sugar 2 teaspoons baking powder 2 teaspoons cinnamon 1 teaspoon nutmeg 1/4 teaspoon ground cloves 1/4 teaspoon salt 3 tablespoons of shortening. (I use Crisco without butter) Rub into dry ingredients, then mix in 1 cup seedless raisins and 1 cup currents and 1/2 Cup molasses 2 beaten eggs and 1/2 cup milk

Directions:(Mix all together with hands, spoon or electric mixer Take your pudding tin and spray generously with Pam (NON-BUTTER FORMULA) Sprinkle in a little flour and sugar mixture Just enough to coat and dump out extra Pour in pudding batter. It should not be too runny, if it is you can add a tad of flour. If it is too stiff you can add a tad of black coffee or rum If you prefer to tie pudding in muslin, wring out the muslin in hot water and sprinkle with a little flour/sugar mixture. Add the mixture to this and tie loosely to allow for swelling. Boil for 3 hours. Check with a hat pin, spaghetti strand or other long cake tester for doneness. If it is not done continue boiling checking every 15 minutes until cake tester comes out clean.
It should dump out of pudding tin when slightly cooled easily.
Rum Sauce for serving 1/2 C water Enough cornstarch to make a paste Stir this into (gradually a little at a time) to 2 cups hot milk to which you have added enough sugar to sweeten. Add 2 oz rum
To flame pudding add a sprig of holly to top. Heat rum or brandy in a sauce pan maybe 1/2 cup max. Pour over pudding and light. Carry flaming dish to table. Or light dish at table. |

Notes: this is a very old recipe and needs to be made well ahead of the serving day to allow flavors to meld as it is "laced" with brandy. Can be made in a pudding mold or cheese cloth. I use a pudding mold. CANNOT be stored in the mold while it is being laced.
