Grandma Telesnicki Cheesecake
3 variations of crusts

Original
2 cups flour
¼ lb of butter
3 Tbsp sour cream
3 Tbsp sugar
2 egg yolks

Put all ingredients in a food processor, process until well mixed, chill for 15 minutes. Pat into 9 x 13 inch pan, or you can pat into buttered dish or parchment paper, then chill while oven heats. Bake at 350º F for 7-10 minutes. Do not leave in fridge very long or it will be too difficult to roll dough or pat into baking dish.

Jenny’s Crust - Vanilla Wafer
1 package of vanilla wafers
¼-½ cup of melted butter

Crush cookies and mix with butter and then pat firmly into a 9 x 13 inch buttered pan.

Graham Cracker Crust - Use if you can't find vanilla wafers.
2 cups of crushed graham crackers
¼-⅓ cups of melted butter
2 Tbsp of sugar
Mix and pat into a 9 x 13 inch pan

Whichever crust you use, make sure to save some of the crumbs for the top of the cake.

Filling: All ingredients should be room temperature.
3 packages of cream cheese - 250g each
1 cup of sugar
1 tsp of vanilla
4 eggs

Directions:

Separate eggs and beat egg whites in a smaller bowl until stiff with wire whip.
With the same wire whip, in a larger bowl, beat yolks, add vanilla, sugar, and then cream cheese one at a time.

Fold in egg whites to yolk and sugar mixture.

Pour over the baked crust at 350º F for 50 minutes. Remove from oven, increase temp to 400º F.

Topping
1⅓ cups of sour cream
⅓ cup of sugar
1 tsp of vanilla

Pour onto the hot cake and top with crumbs from the crust and then put back in the oven for 7 more minutes.
