30 medium whole mushrooms (2 baskets)
1 tbsp. butter
2 tbsp. finely chopped fresh parsley
1/4 cup bourbon
1/3 cup bread crumbs (from a can)
2 tbsp. finely chopped onion
1/2 lb. ground beef
1/4 cup chopped walnuts
2 eggs, well beaten
salt and pepper

Directions:

Wash/clean mushrooms and remove stems. Place mushroom caps in a 9 x 13 shallow baking pan. Brown ground beef and onions and drain. Add butter, stir in salt, pepper and parsley. Remove from heat. Cool slightly and mix in eggs, walnuts, bourbon and bread crumbs. Spoon mixture into mushroom caps. Put a little dab of butter on top of each mushroom. Place in oven uncovered. Bake for 20 min. at 375 degrees.

Tip: If you add raw eggs to a hot mixture of ground beef, they will start to cook. Allow the ground beef to cool before adding eggs.
