1 egg

¾ cup milk

1 cup flour

1 tbs vegetable oil

3 tbsp. baking powder

¼ tsp salt

Margarine, butter or shortening

Directions:
Directions:
Beat egg with hand beater in a medium bowl until fluffy.

Beat in remaining ingredients except margarine or shortening, just until smooth.

For thinner pancakes stir in 1 to 2 tbsp milk.

Heat griddle or skillet over medium heat.

Grease with margarine or shortening.

For each pancake pour butter onto hot griddle.

Cook pancake until puffed and dry around edges.

Turn and cook other side until golden brown.

PS. if you sing self-rising flour omit baking powder and salt.
