3 cans dark red beets

½ ping of Half & Half

Sugar

Salt and Pepper

Cider Vinegar

Directions:
Directions:
Drain the juice from 3 cans of beets into a large saucepan.

Cut and dice thin 2 cans of the beets.

Add cut up beets to the juice and 2 cans of water.

Add pepper and a little salt. Bring to boil and simmer on low at least ½ hour.

Mix together in measuring cup; 1 heaping tbs flour with half & half. Gradually add half & half to flour, til smooth paste is formed.

Pour slowly into soup, stirring as you pour.

Add vinegar to taste, starting with one tablespoon. Sugar to taste.

Pour over boiled potatoes.
