3 ripe bananas 1/2 cup chopped nuts (optional)
2 eggs 2 cups flour
1 cup sugar 1/2 tsp baking powder
1/2 cup oil 1/2 tsp baking soda
1/2 teaspoon vanilla. 1/2 tsp salt
3 tbsp. milk

Directions:

Preheat the oven to 350.
Blend the first 6 ingredients in the blender until combined. Sift flour, baking powder, baking soda and salt together. Combine the wet ingredients with the dry ingredients. Pour batter into a greased loaf pan, bake for about 1 hour. Bread is ready when a knife inserted into the middle comes out clean.

Growing up my Mom would make Banana Bread whenever she had over ripe bananas. Nothing was wasted. We would eat it with cream cheese.
