Directions:Preheat oven to 350º in conventional oven. 345º for convection oven. Cream shortening and sugar. Add beaten eggs and mix thoroughly. Add milk and vanilla, mix thoroughly. Mix Flour, salt, baking soda and baking powder and whisk. add to wet ingredient batter and mix thoroughly. Add coconut, nuts, cornflakes and oats. mix by hand thill thoroughly. Drop by rounded large ice scooper onto parchment covered cookie sheet and flatten with palm of hand. placing at least 1 inch apart. Bake for 12 to 15 minutes till turning slightly brown. Do not overbake or cookies will be crunchy unless that is how you want them. Add 1 tbsp milk to dough at a time if dough becomes to stiff so cookies will be moist. If dough crumbles and won't hold together when you put it on the cookie sheet, this is the time to add more milk. Remove cookies from cookie sheet 1 minute after removing cookie sheet from oven and more cookies to a wire rack. Cookies will be tender and tend to fall apart, so be careful. When cookies are thoroughly cooled, remove from wire rack and place gently in zip lock freezer bags to store making sure all air is gently squeezed out of bag. Cookies may be frozen, as well as raw dough may be frozen for up to 6 months if stored in freezer bags with air removed. Enjoy and remember to share! Variations: You may add roasted peanuts, but they don't keep as well so eat them up quick! You may add peanut butter smooth or crunchy to the batter. Dough will be slightly stickier so add a little flour till batter is of consistently to be easily scooped. You may add any combination of nuts you choose. Walnuts and pecans seem to work best for long storing of cookies. |

Notes: These Texas Ranger Cookies are always a holiday favorite at my family Christmas. In our house we eat them year round They are the best survival cookie ever baked. They make a hearty and tasty breakfast. I carry them in my backpack when hunting or fishing. Trust me, deer love the smell and taste of these cookies as much as I do. Always remember, anything good worth eating is worth sharing and that includes the recipes. The only family secret I cook or bake with is Love! No that is a secret worth sharing. This cookie will last a long time if stored properly. They may get crunchier over time, but they stay delicious even after months of storing. This is a family recipe that I have personalized to my personal taste. Feel free to experiment with it.
