⅓ cup shortening
⅓ cup sugar
1 egg (beaten)
⅔ cup honey
2¾ cup flour (sifted if desired)
1 tsp baking soda
1 tsp salt
1 tsp lemon extract

Directions:
Directions:
Cream together sugar and shortening.
Add beaten egg and honey. Then add lemon extract.
Roll out ¼ - ½ thick. Cut with fun cookie cutters.

Bake at 375º for 8-10 minutes on lightly greased cookie sheet, or cookie sheet lined with parchment paper. (Depending on your oven. I like to cook mine for 7 minutes)
