1 lb of ground turkey, I prefer dark meat as the fat content is greater.
1 lb of ground chicken
2 eggs
1/2 -3/4 c of panko crumbs
parsley, basil or oregano to season to your preference
Trader Joes 21 salute seasoning
Salt & pepper

Beat the eggs in a bowl and add a splash of milk or half n half.. Add the panko to the egg mixture and stir.

Let that sit and mix the ground meats in a large bowl, gently using a fork mix well but do not over mix or beat up as that will result in tough meatballs. Then add the panko/egg mixture combined with your seasonings.

Heat a frying pan, add some olive oil or avocado, your preference. Shape meatballs and brown in a medium hot pan. Turning till browned. Once they are browned you can lower the heat and partially cover to finish cooking the meatballs thru.

I usually have leftovers and use the meatballs sliced to top a homemade pizza! They also freeze well.
