(Mix 1)
1 c sugar
1/2 c flour
1/4 tsp salt

(Mix 2)
1 c boiling water
1/3 c milk

(Mix 3)
3 egg yolks
1 egg white

(Mix 4)
1/4 c lemon juice
1 tsp lemon rind
1 T butter

Directions:
Directions:
Combine first mix in a double boiler on stove top.
Add in second mix, cook till coats spoon.
Add third mix, stir.
Add fourth mix, and cook a minute or two longer.
Beat until creamy.
Put into prebaked pie crust, and add meringue.

Bethya had a great memory about Grandma and Lemon pie, so I had to add it...

I remember when grandma was teaching me to make her lemon pie.
I was getting impatient stirring the custard with that old wooden spoon.
“Grandma can I stop stirring now?”
I remember asking.

She put her hand on my shoulder and looked into my eyes and said “Bethya, you need to learn the value of patience. If you stop stirring this custard now it will be a soupy mess of a pie. And a soupy lemon pie is shame indeed!”

I kept stirring

It came out wonderful.

I never forgot what she said about patience.
