"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
3 loaves of uncut stuffing bread
1 Lb. bacon
2 Large onions
4 eggs
Milk or water added to consistency desired
Seasoning (salt and pepper or mix of seasoning or poultry seasoning)

Directions:
Directions:
Cut all loaves of bread into slices and then dices, large pieces are o.k. Cut bacon into diced pieces. Fry in pan until crisp. Dice onion. In a very large bowl mix diced bread, raw onion, fried bacon and bacon grease from cooking, eggs, and seasoning. Add ½ cup milk or water and mix together. Add additional milk or water until mixture becomes mushy. If you make mushier it will be less dry. Stuff the turkey cavity as full as you can. Cook amount of time recommended for our size turkey stuffed. If not stuffing turkey put mixture into one or multiple tin pans. A tin pan will make the edges crispier if that is how you like it. Cook for 45 min to 1 hour 15 min checking to make sure edges aren’t burnt and center is no longer mushy.
