6 eggs
3 c milk
2 T vanilla
1 tsp salt
½ c sugar
1½ - 2 c flour

Directions:
Directions:
Mix all ingredients well in mixing bowl. Pour about 1/4 c of batter onto a hot, well-greased griddle and tilt griddle around until griddle is covered with a thin layer of batter. Watch closely and use butter knife to circle around the outside of the batter when it looks 'dry'. When the pancake seems ready to turn, take the knife and slide it under the center of the pancake, lift, and flip over, rolling it to other side. When light brown on both sides, lift pancake by again sliding knife under the center of the pancake. Lay on plate folded in half. Oil griddle before each pancake.
Serve by opening pancake flat, filling with your choice of fruit, eggs, bacon, or whatever sounds good. Use a fork to roll into a 'carpet roll" shape. Top with more fruit, syrup, whipped cream, and powdered sugar. Enjoy!
