Gramma Lena's Vegetable Frittata Recipe

1 medium sized cabbage, cauliflower or broccoli
1 onion, chopped
10 eggs
1 1/2 cups Italian bread crumbs
1 cup grated Parmesan plus more to sprinkle on top (go for the good stuff)
3 heaping tablespoons garlic powder
Italian seasoning or Tony Chachere's spice
Olive Oil
Butter

Directions:
Directions:
Saute the vegetable and onion in an olive oil/butter mixture.
Drain any residual oil away from the vegetables.
Add eggs, garlic powder, bread crumbs, cheese and seasoning
The mixture should be like a pancake consistency.
If it is too dry, add eggs. If too soupy, add bread crumbs.

Heat olive oil and butter in a large skillet until sizzling.
Pour mixture to fill the skillet.
Cook until you can easily lift the sides with a spatula.
Place a large plate over the skillet and flip the frittata.
Add a little butter and more olive oil and slide the frittata back into the sizzling pan.
The second side takes less time to cook so watch it closely.
Sprinkle the top of the frittata with parmesan and enjoy.

Once out, cut into pie shaped wedges. You could also opt to cook these as small pancakes which makes it much easier to turn and monitor.
