2 lbs beef stew meat
2 soup bones or knuckles

Water as needed

1 large can tomatoes
4 sliced celery stalks
4 sliced carrots
1 onion, large diced
4-6 potatoes, chopped
1/2 small head cabbage

If desired, frozen peas, rice, green beans, barley, etc

Directions:
Directions:
Salt and simmer the meat and bones till tender, and then cool them, cut up and toss into a large sauce pan with the rest of the ingredients.

Add water as needed.

So, this is called vegetable soup, but I think it is actually soup with vegetables, since it has meat as the first ingredient. :)

My mom said they would often boil the bones in V8 juice instead of water and not use the stew meat, so it was a more vegetable soup... with beef bones sneakily in the sauce.
