8 fairly large onions
1/2 stick of butter
1/2 lb. sausage
1 C breadcrumbs soaked in milk and drained1/4 C chopped parsley
salt
pepper
1 C beef stock
1/2 C dry white wine

Directions:
Directions:
Scoop out the center of the onions leaving a shell about 1/4 inch thick.
Chop enough of the onions that were scooped out to make 2 Cups.

Blanch onion cases in boiling water for 5 minutes and turn them upside down on a rack to drain.

In a skillet, saute chopped onion in butter. Add sausage, crumbled, and saute until cooked. Add drained breadcrumbs. Simmer for 5 minutes and add parsley, salt and pepper.

Season shells lightly with salt and pepper and fill with stuffing. Arrange in a buttered shallow baking dish and pour beef stock and white wine around the onions. Dot each onion with butter. Bring liquid to boil on top of the stove.

Bake at 350 for 45 minutes.

Place cooked onions in a serving dish and reduce juice by half,. Pour over onions and sprinkle with chopped parsley.
