1 1/2 cup sugar
1/2 cup vegetable oil
2 cups flour
1/2 teaspoon baking soda
2 teaspoon cinnamon
Dash of nutmeg
2 teaspoon vanilla
4 cups chopped apples
1/2 cup chopped nuts (optional)

Directions:
Directions:
Beat eggs and gradually add small amounts of sugar, beating well. In separate bowl, mix dry ingredients togethether.
Add vegetable oil to egg and sugar mixture, beat well. Gradually add flour mixture and vanilla, alternating with chopped apples. After everything is mixed together, add nuts (if desired).

Bake in 9 x 13 greased, floured pan at 375º F for about 30 minutes.
