2 lbs ground beef
1 egg
1 ½ tsp salt
½ tsp pepper
¼ onion, grated
1 tbsp nutmeg
3 tbsp flour
4 tbsp butter
¼ c flour (for roux)
2 tbsp beef flavor "better than bouillon" (optional)
Beef broth to add flavor (optional)

Directions:
Directions:
1. Mix beef, egg, salt, pepper, onion, nutmeg, 3 tbsp flour together. Roll into meatballs or use an ice cream scoop. Brown in a skillet in batches. Remove to a plate.
2. Add butter and ¼ c flour to the skillet. Stir and brown.
3. Add broth or boiling water and beef flavor to make gravy, scraping up whatever stuck to the pan while browning.
4. While the gravy is still thin add meatballs and allow to simmer at least 30 min. Salt and pepper to taste.

Alternate Method: Scoop meatballs onto a baking sheet with sides. Bake in the oven until done. Remove to plate. Melt butter in a dutch oven, add all the residue from the baking sheet. Make gravy as above. Add meatballs and simmer to blend flavors.

Mom's notes: The gravy making is really not this precise. I just sort of do it. So give it a try and see if you need to adjust anything. You might even want to double the gravy so you get a lot. But you will lose a little flavor so you would probably want the bouillon or beef broth. Browning the flour mixture is important, as are pan drippings. Sometimes I will even use one of the meatballs to brown in the butter to improve the flavor.
