Butter Cookie:
2 1/2 c. all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 1/2 c. packed brown sugar
1/2 c. margarine or butter
2 eggs
1 tsp. vanilla
1 c. sour cream
1 c. chopped walnuts

1 recipe Browned Butter Icing:
1/4 c. butter
2 c. sifted powdered sugar
2 T. water

Directions:
Directions:
Combine flour, soda, baking powder, and salt; set aside. In a large mixing bowl combine brown sugar and margarine or butter and beat with an electric mixer on medium speed until well combined. Beat in eggs and vanilla until fluffy. Add dry ingredients to margarine mixture along with sour cream, mixing well. Stir in nuts. Drop by teaspoonfuls onto a greased cookie sheet. Bake in a 350 degree oven about ten minutes. Transfer cookies to a wire rack. Cool and frost with Browned Butter Icing.
Icing: In a small saucepan heat 1/4 c. butter (not margarine) over medium heat until butter turns the color of light brown sugar. Remove from heat. Stir in 2 c. sifted powdered sugar and enough boiling water to make the icing smooth and of spreading consistency. Frost cookies immediately. If frosting becomes grainy, soften with a few more drops of hot water.

A parent of one of my students would drop these off in my classroom throughout the year in a gingham basket tied with ribbons. Soon, word would spread and staff from every room would suddenly appear at my classroom door, hoping for a taste. These are delicate cake-like soft cookies frosted with a browned butter icing. Definitely a crowd pleaser!
