"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Directions:
Making the Dough:
1.) Warm milk in microwave for 45-60 seconds until it is approximately 105º F
2.) Place milk into the bowl of your stand mixer, then add 1 tbs sugar and yeast to the milk. Stir and let it proof for five minuted or until it becomes foamy.
3.) Add 1/2 cup sugar, butter, eggs, and vanilla to the mixture. Use dough hook to stir until combined.
4.) Add 4 cups flour, salt, and cinnamon and stir with the dough hook. Start on low and increase to high.
5.) Knead the dough in the stand mixture until a large ball is formed. The dough should be smooth and only slightly tacky to the touch. If it seems too tacky, add 1 tbsp flour at a time until a smooth ball is formed.
6.) Transfer dough to a floured surface and knead with your hands until it is smooth and elastic. (3-5 minutes). Form it into a ball.
7.) Grease a large bowl and place dough inside.
8.) Cover the bowl with a warm, damp towel and put the dough in a warm place to rise.
9.) Let the dough rise in a warm place about 1 hour or until the dough has doubled in size.

Making the Filling:
Mix brown sugar and cinnamon together.

Making Cinnamon Rolls:
1.) Sprinkle large work surface with flour.
2.) Gently press the gas out of the dough and form it into a rectangle.
3.) Roll the dough into a 24"x12" rectangle, about 1/4" thick.
4.) Melt the butter and then brush onto dough.
5.) Sprinkle the dough with cinnamon sugar and pat it down gently to insure it sticks.
6.) Roll up dough, cut into 12 equal sized rolls. (Roughly 2" long)
7.) Line 9x13" baking dish with grease or parchment paper with grease. Then place rolls in 4 rows of 3, evenly spaced.
8.) Cover and let rise until nearly doubled. (About 30 minutes and preheat oven at this time.)
9.) After they rise, bake them in preheated oven until golden brown, about 18-20 minutes. (Check to make sure they are baked thoroughly.)

Make Cream Cheese Frosting:
1.) While rolls are baking, beat together cream cheese, butter, powdered sugar, vanilla extract and salt. Do not chill the frosting. Keep at room temperature until cinnamon rolls are baked.
2.) Once cinnamon rolls have been removed from the oven, spread the cream cheese frosting while they are still warm.
3.) Cool & serve
