1 cup salted butter
½ cup confectioners sugar
2 tsp vanilla extract
2 cups flour
1/4 tsp salt
Raspberry preserves for topping

Directions:
Directions:
Preheat oven to 325º.

Cream butter and sugar in electric mixer. Add vanilla scraping down bowl as needed. Add salt and then flour and blend only until thoroughly combined.

Roll small teaspoons of dough about ¾ inch in diameter. Place12 on a cookie sheet about one inch apart. Press down the center with your thumb being careful to leave walls to hold the jam. Fill each with jam and spread to the edges. Bake about 15 minutes just until they start to brown. Transfer to wire rack to cool.

Store in tin can. Dust with confectioners sugar just before serving.

Makes 4 dozen cookies.
