1 1/4 cups sugar
2 1/2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
speck of cloves
2 cups canned (or fresh processed) pumpkin
2 eggs
2 cups milk
1/4 to 1/2 cup bourbon
2 unbaked pie shells

Directions:

Preheat oven to 450 degrees.

Sift together sugar, cinnamon, ginger, salt and cloves. Add pumpkin. Beat eggs till foamy on top and add milk. Add to pumpkin mixture. Add bourbon to taste. Pour into pie shells. Put pies in oven for 15 minutes. Lower oven temperature to 350 degrees and cook for 45 minutes (usually takes longer to cook fully). Test with a knife. Serve with whipped cream.

An original SAJE cookbook recipe. This is an old family recipe from my maternal grandmother Littler. The secret ingredient is the bourbon. Sister Liz usually makes this without the crust, so it is a pumpkin custard.
