2 ½ tsp good vanilla
½ - ¾ tsp Bakers Ammonia**
½ tsp sea salt
1 ¼ c sugar
1 c butter - softened
2 c flour
sugar for coating

Directions:
Directions:
Preheat oven to 300º. Line two baking sheets with parchment.

Combine the vanilla, Baker's Ammonia & salt in a small bowl. Stir to dissolve the ammonia. Combine the vanilla mixture with the butter & sugar and beat til smooth. Add flour gradually. It will be dry and crumbly, but will come together after a while. Use a small teaspoon or cookie scoop to portion the dough into small balls. Roll until smooth & then in a bowl of sugar until coated. Place on the prepared baking sheets. Flatten slightly with a glass dipped in sugar. The cookies will spread a little, but not much.

Bake until the cookies are very light golden brown round edges about 20-25 minutes depending on your oven. Remove from oven & place on a rack to cool.
